Pear, Caramelized Onion and Brie Flatbread

On these hot summer days we want easy no fuss meals we can share with friends and family while hanging out in the backyard or on the patio. This Pear, Carmelized Onion and Brie Flatbread is perfect for sharing with a group as a small snack or enjoyed with fewer people as a meal with a nice green salad. 
INGREDIENTS

  • 2tbsp butter
  • 1tbsp olive oil
  • 1 large onion thinly sliced
  • salt and pepper
  • 1tbsp sugar
  • 1 loaf ficoccia bread or something similar (big and flat)
  • more oil for drizzling
  • 2 pears
  • 1 medium wheel of Brie Cheese
  • Maple Syrup for drizzling
DIRECTIONS
  1. In a cast iron pan (or skillet) melt butter and add olive oil over med- high heat. Add onions and salt and pepper and cook for 5 min or until onions soften.
  2. Stir in sugar and cook for 20 min or until onions are golden and set aside.
  3. Cut bread in half to make 2 open faced sides.
  4. Brush with Olive Oil.
  5. Toast the soft side on the grill.
  6. Remove from grill.
  7. Thinly slice pears and place on top of bread.
  8. Place carmelized onions on top of pears.
  9. Slice Brie Cheese and place on top of everything.
  10. Return to the grill on low for 10 min or until cheese has melted.
  11. Drizzle lightly with Real Maple Syrup.
  12. Slice and enjoy!
