Picnic in High Park

Last week, like most Torontonians we ventured to High Park to see the cherry blossoms. It’s something we look forward to each year.

There are about 100 cheery trees planted down a grassy hill on the shores of Grenadier Pond, a gift from the government of Japan. In early spring they blossom with these lovely light pink flowers that only last a few days to a week. They remind us of growing up in Niagara-on-the-Lake and the orchards of cherry trees in blossom- so pretty!

To avoid some of the crowds, we went on a weeknight but as you can see it was still quite busy. We rode our bikes to the park and brought along a simple picnic of wine and bruchetta. We picked a spot right under the blossoms at the top  of the hill and enjoyed the natural beauty.

To make our bruchetta bike travel friendly, we put all of the bruchetta topping ingredients (recipe below) into a mason jar and picked up a baguette and some goat cheese from a local bakery. To make the bruchetta, we just gave the mason jar a good shake and placed it on top of the baguette slices with some goat cheese. It was a super simple but very rewarding little snack and went perfectly with the bottle of Sauv Blanc we brought along 😉

Simple Bruchetta Recipe

Ingredients:

  • 2 large, ripe tomatoes diced
  • 3 cloves minced garlic
  • 1 medium onion, diced
  • big handful of basil leaves, ripped
  • drizzle of good olive oil
  • salt and pepper to taste
  • 1 french baguette
  • soft goat cheese (optional but tastes awesome)

Directions:

  1. Mix tomatoes, garlic, onions,basil, olive oil and salt & pepper 
  2. Serve on sliced baguette (goat cheese optional)
  3. Enjoy!

Introducing Delishsis D.I.Y.

Introducing our new D.I.Y. column! We’ll be featuring a new D.I.Y. posts along with the recipe posts you are used to seeing from us. We are excited to show you another side of delishsis, please let us know what you think in the comments below.

Spring is here and we are starting to see our local fruit markets slowly spill out onto the sidewalks. As we were walking around this weekend, we noticed all of these bright, colourful spring flowers and had to pick some up. Although the flowers are beautiful, the green plastic container they come in…not so much. We didn’t want to go out and buy a new pot so we decided to make one ourselves.  It makes the perfect gift to bring to your host on Easter, keep for yourself, or make for a friend to brighten up their day.

Supplies (clockwise from top left): 1) can from our recycling FREE  2) Washi Tape we got here for $2.75  3) Indoor/Outdoor spray paint from local hardware store  $6.99  4) small potted plant from local market $2.99 (make sure the pot it comes in has the same diameter as your can)DIY-1-image-3

How it’s done: 1)  Find a large sized can, remove label, wash and dry  2) Give the can 2 coats of spray paint, let dry after each coat 3) decorate with washi tape DIY-1-image-4

4) Put a pretty plant in it and voila! You’ve got yourself a cute springtime gift!

Gluten Free + Lactose Free Cake

It was my dad’s birthday this past week, with him wanting to make his own dinner (he makes the best meals so we couldn’t refuse), I decided to bring dessert. With a wheat and lactose allergy I endeavored to make a cake to accommodate. Finding a great tasting gluten-free/ wheat free cake is hard enough on its own without trying to find one that is lactose free too. With a bit of research online I found a gluten-free cake recipe, and substituted lactose-free ingredients. What I came up with was an orange-flavoured two layer cake with a marshmallow top…that’s right marshmallow!

First, start by making your marshmallow layer. I used a recipe from LCBO Food & Drink magazine . Using this recipe, omit the salt and substitute the vanilla extract for orange extract. Once you pour the mixture into the pan to sit, drizzle 1 tsp.orange food die and use a toothpick to marble. Sift icing sugar over top, wrap and set aside.

For the cake I used a gluten-free recipe found here. Substitutions: all-purpose gluten-free flour, vegan margarine for butter, orange extract for vanilla. I made two batches of this and died one with orange food die. Poured the white mix into a shallow square pan, and the orange batter into a square deep pan (slightly smaller).

Once the mixes were baked and cooled I trimmed the edges, stacked them on top of each other and added the trimmed marshmallow layer on top. Was this ever delicious!

V-Day Smoothie

Sometimes, it’s the little things that are the most memorable, and you don’t need to go all out to express your love.  Here’s a cute idea to show someone you love them on Valentine’s morning and send them off on their day feeling special!

Ingredients: V-Day Smoothie (makes 2 servings)

  • 2 bananas
  • 1 cup frozen raspberries
  • 1 cup frozen strawberries
  • 1/4 tsp vanilla
  • 1 cup almond milk

 

Directions: V-Day Smoothie

  1. Throw all ingredients into a blender and blend until smooth
  2. Serve in a tall glass topped with a heart and arrow

 

Supplies: DIY Heart & Arrow (makes 2)

  • 2 large strawberries
  • small knife
  • 2 toothpicks
  • paper of your choice
  • scissors
  • tape

Directions: DIY Heart & Arrow

  1. Cut the top off of the strawberries
  2. Cut a V shape into the tops to make the strawberry look like a heart (it doesn’t have to be perfect to get the message across)
  3. Skewer the strawberry with the tooth pick horizontally
  4. Cut shapes for the arrow out of paper and tape onto the tooth pick
  5. Slice a slit into the bottom of the strawberry and place on the side of your smoothie glass
  6. Enjoy with someone you love!

The Zucchini Noodle Swap

It’s cold and flu season and the best way to stay healthy and fight off bugs is to eat a healthy diet including lots of fruits and veggies. This week we thought we’d share a simple trick to sneak more veggies into your diet with a meal that you likely make all the time, spaghetti and tomato sauce.

Basically, instead of using spaghetti noodles, we swap them for zucchini “noodles”. When topped with a tasty sauce, or sauteed with herbs, garlic and olive oil, you don’t even notice. This is also great for celiacs and those with gluten and wheat sensitivities too.

To do this is very simple and having the right tools help.  We find this julienne peeler from amazon.ca the best for making zucchini noodles because they come out nice and thin, just like spaghetti. If you don’t have a julienne peeler, you can use a regular carrot peeler to do the job, you’ll just end up with flat and wide noodles instead.

To make, simply use the peeler lengthwise down the zucchini and peel until you can’t peel anymore. Once peeled, place into a pot of boiling water for 2-3 minutes, strain and top with your favourite sauce, perhaps a little parm and enjoy!
