Spicy Chicken Chipotle Chili

We’re back with a dish that will definitely spice things up!  This chicken chipotle chili has a nice spiciness and smokey flavour thanks to canned chipotle peppers in adobo sauce. They add such a great taste & colour to this chili that we even tricked the most meat-loving men in our lives into thinking this was beef chili (no joke).  So serve this up as a healthier and just as tasty (if not tastier) alternative to traditional beef chili and spice things up!


  • 2 tbsp oil
  • 1 large Spanish Onion, diced
  • 4 cloves of garlic, minced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 can of Chipotle Chili Peppers in Adobo Sauce (found in the international food aisle at the grocery store near all of the salsas, etc)
  •  450 g of lean ground chicken
  • 1 can of crushed tomatoes
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 can (540 ml/19 oz) of kidney beans, drained and rinsed
  • salt & pepper to taste
  • toppings of your choice (suggestions: sour cream, shredded cheese, green onion, cilantro, guacamole)


  1. In a large skillet, brown ground chicken, drain fat and set aside
  2. On medium heat in a large pot heat oil
  3. add diced onions, red & green peppers and minced garlic and cook until tender, stirring frequently
  4. add chipotles and adobo sauce and crushed tomatoes, stir to combine
  5. add chicken &  spices
  6. bring to a boil, reduce to a simmer
  7. add beans
  8. simmer for 30-40 min on low, stirring occasionally
  9. top with your favourite toppings & enjoy!
