Spicy Three Bean Vegetarian Chili

The temperature outside has been steadily dropping colder and colder, today especially.  To warm up, we made this delicious spicy three bean vegetarian chili. This chili is hearty and flavourful enough that meat eaters will barely even notice that it’s a vegetarian dish. We hope this warms you up!

INGREDIENTS

  • 1tbsp cooking oil
  • 2 med onions, diced
  • 2 cloves garlic , minced
  • 3 bell peppers, diced
  • ¼ tsp cayenne pepper
  • 2 tbsp chili powder
  • 1 ½ tbsp ground cumin
  • ½ tbsp chipotle chili powder
  • salt and pepper to taste
  • 6 diced roma tomatoes
  • 1 small can of tomato paste
  • 1 can of crushed tomatoes/tomato preserves
  • 1 tbsp hot sauce
  • 1 can of each: chick peas, black beans kidney beans

DIRECTIONS

  1. heat large pot over med heat
  2. add a bit of oil to pot and cook onions until translucent (about 4-5 min)
  3. add to pot 2 cloves of garlic minced
  4. cook garlic, stirring frequently until very fragrant about 2 min being careful not to burn
  5. add 3 diced bell peppers of your choice, we used one of each: red, yellow, green
  6. cook for another 4-5 min
  7. add spices and cook for 1-2 minutes, stirring frequently until spices become quite fragrant
  8. add 6 fresh diced roma tomatoes to the pot & mix
  9. add 1 small can of tomato paste and mix until incorporated
  10. pour in crushed tomatoes
  11. add hot sauce
  12. add 1 can of each to pot: chickpeas, black beans, kidney beans, all drained and thoroughly rinsed
  13. stir chili together
  14. lower heat slightly to medium and simmer for 20-25 min
  15. Serve with a dollop of sour cream and fresh cilantro.
