St. Patrick’s Day Cupcakes

It’s St. Patrick’s Day tomorrow but we are celebrating today with these cute and delicious shamrock cupcakes! For these we used Mill St. Cobblestone Stout in our chocolate cake batter and spiked the cream cheese icing with 3 shots of Bailey’s Irish Cream. They taste just like an irish car bomb in cake form. To get them into the shamrock shape, we used this handy little trick we found on pinterest. Happy St. Patrick’s Day!

Ingredients: Stout & Chocolate Cake

  • 1 tall can of Mill Street Cobblestone Stout
  • 3/4 cup of unsweetened coca
  • 1.5 cups of sugar
  • 2 cups of all purpose flour
  • 1 tsp baking soda
  • pinch of salt
  • 1/2 cup of melted butter
  • 1 tbsp vanilla
  • 3 eggs
  • 3/4 cup sour cream

Ingredients: Bailey’s Spiked Cream Cheese Icing

  1. 1  8oz package of cream cheese
  2.  3/4 cup whipping cream
  3. 1.5  cups icing sugar
  4. 3 oz Bailey’s irish cream

Directions:

  1. Preheat oven to 350
  2. Mix wet ingredients in a large mixing bowl
  3. Mix dry ingredients in another large bowl
  4. slowly mix dry ingredients into wet ingredients, mix until incorporated
  5. line muffin tins with paper liners and follow this little trick here to get the shamrock shape
  6. fill with cake mix
  7. cook for about 15 min or until an inserted toothpick comes out clean
  8. let cakes cool, bake remaining batches, repeat
  9. In a large bowl combine all icing ingredients and blend with an electric mixer until smooth
  10. top cupcakes with icing and enjoy with friends
