Strawberry & Cream Cheese Stuffed French Toast

This weekend the weather was gorgeous and we had our Mom over for a nice backyard brunch. We wanted to do something special and while shopping at our local market, we saw these lovely Ontario strawberries which inspired us to make this Strawberry & Cream Cheese Stuffed French Toast. It may sound complicated, but trust us, if you can make regular french toast, you can make this extra special version too.



for the french toast:

  • 6, 1 inch thick slices of bread from your local bakery (we got ours at Cob’s in Bloor West Village)
  • 6 eggs lightly beaten
  • 1/4 cup Almond Milk
  • 1/2 teaspoon sugar
  • 1/4 teaspoon vanilla extract
  • butter to coat pan

for the filling:

  • 1    8 oz package of light cream cheese
  • 1/4 cup of confectioners/icing sugar
  • splash of almond milk
  • 8 -10  thinly sliced strawberries


  1. Lay 1 slice of bread face down and cut a slit horizontally to make a pocket. Make sure to leave about 1/4 “ on either side (be careful not to slice through). Repeat with each slice of bread
  2. One slice at a time, spread cream cheese mixture in the pocket you sliced and add as many strawberries as can comfortably fit without busting out
  3. Pre-heat oven on low (about 200 F)
  4. Whisk together eggs, almond milk, sugar and vanilla into a large rectangular deep dish (if you don’t have a large one, do it in equal smaller batches)
  5. Set each stuffed slice of bread into the egg mixture and let sit for 10 min before carefully flipping over
  6. In a well- seasoned cast iron skillet (or non-stick fry pan) melt enough butter to coat the pan over med heat
  7. Cook each slice on each side until golden brown/ cooked through
  8. Place cooked slices in the oven to keep warm on a baking sheet
  9. When cooking is complete, remove from oven and slice diagonally
  10. Top with raspberry coulis and sweet yogurt sauce as shown in photo or  substitute for strawberry/ raspberry jam and flavoured yogurt
  11. Enjoy!
