The Zucchini Noodle Swap

It’s cold and flu season and the best way to stay healthy and fight off bugs is to eat a healthy diet including lots of fruits and veggies. This week we thought we’d share a simple trick to sneak more veggies into your diet with a meal that you likely make all the time, spaghetti and tomato sauce.

Basically, instead of using spaghetti noodles, we swap them for zucchini “noodles”. When topped with a tasty sauce, or sauteed with herbs, garlic and olive oil, you don’t even notice. This is also great for celiacs and those with gluten and wheat sensitivities too.

To do this is very simple and having the right tools help.  We find this julienne peeler from the best for making zucchini noodles because they come out nice and thin, just like spaghetti. If you don’t have a julienne peeler, you can use a regular carrot peeler to do the job, you’ll just end up with flat and wide noodles instead.

To make, simply use the peeler lengthwise down the zucchini and peel until you can’t peel anymore. Once peeled, place into a pot of boiling water for 2-3 minutes, strain and top with your favourite sauce, perhaps a little parm and enjoy!
